These buffalo chicken stuffed mini peppers are quick to make and come together with just four ingredients! These are a great appetizer for entertaining or afternoon snack.
If there is one thing I will forever crave, it’s buffalo sauce. I have this vivid memory of eating buffalo wings at a bowling alley with friends when I was in high school, and those wings were absolutely amazing!
We don’t do a lot of entertaining in our house, but we do gather around the table quite often, and with eight people under one roof, it can sometimes feel like you’re hosting a dinner party. I had a craving for those bowling alley buffalo wings, but trying to make buffalo wings to feed 8 people can be a bit much, so I improvised. These buffalo chicken stuffed mini peppers are a wonderful addition to a family game night, and they were so easy to throw together with only four ingredients. I also highly recommend drizzling them with blue cheese dressing if you have any on hand.
Buffalo Chicken Stuffed Mini Peppers
2 cups chicken, cooked and shredded
1 lb sweet mini peppers
1 8oz package of cream cheese
1 cup buffalo sauce
- Preheat the oven to 350 degrees. Cut the peppers in half lengthwise and scoop out the seeds. Place them on a baking sheet lined with parchment paper.
- In a large bowl, mix together shredded chicken and cream cheese until well combined. Add in buffalo sauce and combine.
- Using a spoon, fill the peppers with the chicken mixture. Bake in the oven 14-16 minutes. Serve warm.
