These coconut chai ice pops are creamy and refreshing without adding any dairy. They are a perfect summer treat and will be a favorite of any chai tea lover!
One of my absolute favorite drinks is a chai tea latte! I love the combination of spices in a creamy, warm drink, and it’s something I crave throughout the entire year. Since the weather is starting to warm up, and I have these cute reusable ice pop molds on hand, I thought it would be fun to turn my favorite warm drink into a cold dessert.
One of the good things about this stay home order is the ability to experience in the kitchen. Since I’ve been on a bit of a coconut milk kick lately, I thought it would be fun to mix the flavors, and these coconut chai ice pops turned out amazing!
Coconut Chai Ice Pops
2 black tea bags
1/2 cup sugar
1/2 cup water
1 cup coconut milk
1/2 tsp ground ginger
1/2 tsp cinnamon
1/4 tsp cardamom
1/4 tsp allspice
pinch of salt
shredded coconut (optional)
- Combine the sugar and water and tea bags in a small saucepan and simmer over medium-high heat for about five minutes. Sugar should be completely dissolved. Remove from heat and pull out tea bags. Let cool to room temperature.
- In a medium-sized bowl, combine tea mixture, coconut milk, and spices.
- Pour the mixture into ice pop molds and sprinkle the top with shredded coconut. Freeze overnight or at least four hours before eating.
