Lemon + Ginger Infused Honey

About a year ago I started taking an online herbalism course as a way to take back control of my life. That course introduced me to the art of infused honey, and I have been hooked ever since. 


As a child, my mom would give us a spoonful of honey and lemon whenever we started to get a scratchy throat. This is a remedy that has stuck with me into adulthood, so of course, I had to try it out as an infusion. 

Lemon and ginger infused honey is excellent to add to teas and warm drinks because of its antibacterial and anti-inflammatory properties.

Ingredients

24oz local honey
1-quart Jar with lid
3 lemons
2-inch piece of ginger, peeled

Instructions
  1. Slice the lemons and ginger and place them in the jar. 
  2. Pour the honey over the lemons and ginger. Stir.
  3. Screw the lid on tightly and place in a warm spot to sit for at least a week. (I put mine in my kitchen window.)
  4. Strain the honey through a sieve to remove the lemon and ginger pieces. Store in the fridge and use within 3-4 weeks. 

To use: add a tablespoon or two to tea or cider. You can also make a Hot Toddy by mixing two tablespoons of the honey and one ounce of spiced rum into a mug of hot water.
