About a year ago I started taking an online herbalism course as a way to take back control of my life. That course introduced me to the art of infused honey, and I have been hooked ever since.
Lemon and ginger infused honey is excellent to add to teas and warm drinks because of its antibacterial and anti-inflammatory properties.

Ingredients
24oz local honey
1-quart Jar with lid
3 lemons
2-inch piece of ginger, peeled
Instructions
- Slice the lemons and ginger and place them in the jar.
- Pour the honey over the lemons and ginger. Stir.
- Screw the lid on tightly and place in a warm spot to sit for at least a week. (I put mine in my kitchen window.)
- Strain the honey through a sieve to remove the lemon and ginger pieces. Store in the fridge and use within 3-4 weeks.
To use: add a tablespoon or two to tea or cider. You can also make a Hot Toddy by mixing two tablespoons of the honey and one ounce of spiced rum into a mug of hot water.
