Refreshing melon and cucumber salad with feta and cilantro and drizzled with a simple lime dressing.
One of my favorite things about summer is all of the fresh flavors you get to experience. Foods like salsa, melon, and fruit salad just don’t hit the same in the cooler months. With summer on its way out and fall slowly moving in, I’m trying to soak up the last bit of those flavors before I move onto pumpkin spice and winter squash.
This melon and cucumber salad is super easy to throw together and is a great addition to any end of summer meal.
What Type Of Melon Should I Use?
You can use any melon in this salad. Watermelon, cantaloupe, and honeydew melon will all pair amazingly with the cucumber, feta, and cilantro. I originally picked up a honeydew at the store because I thought all the shades of green would be pretty together, but when I cut it open it was actually an orange-fleshed honeydew.
How To Make Melon and Cucumber Salad
2 cups melon, cut into cubes
1 cucumber, diced
1/2 cup feta cheese crumbles
1/4 cup cilantro, chopped
2 tbsp olive oil
1 tbsp red wine vinegar
2 tbsp lime juice
salt and pepper to taste
- In a small bowl, whisk together olive oil, red wine vinegar, and lime juice.
- In a large bowl, combine melon, cucumber, feta cheese, and cilantro. Add in dressing and gently mix until the melon and cucumber are coated with the dressing.
