Slow Cooker Italian Sausage Tortellini Soup

Soups tend to remind people of fall, but in our house, they are a year-round delight. My mom is famous for saying, “you can make a soup out of anything.” Okay, maybe not famous, but it is something she says quite often. 

As a kid, there were many times when we didn’t have a lot of food in the house. My mom was the master of taking whatever ingredients we had on hand, adding in some broth, and making it into a meal that our large family could enjoy. It is amazing what can be done with some vegetables, water, and spices. This gave me a sincere appreciation for soups, and I love making them, especially if I can throw it in the crockpot.

Since we tend to keep pasta ingredients stocked (spaghetti is our go-to not-sure-what’s-for-dinner meal) it was effortless to pull this soup together. Tortellini is somewhat of a delicacy in our house since it can be a bit pricey when feeding a family of nine, but adding it to soup make a little go a long way.

Ingredients

1 lb Italian sausage, browned
1 onion, chopped
1 red bell pepper, chopped
1 green bell pepper, chopped. 
3 carrots, sliced
1 garlic clove, minced
1 can tomato sauce
1 can diced tomatoes
4 c beef broth
1 c water
1/2 c dry red wine
2 tsp dried oregano
1 tsp dried basil
salt & pepper to taste 
1 tsp crushed red pepper flakes
1 lb frozen cheese tortellini

Instructions 

Prep: 20 min     Cook: 6hr 45min

  1. Brown sausage in a large saucepan over medium heat. Remove from heat and blot with a paper towel to remove extra grease. 
  2. In a large slow cooker, combine sausage, onion, bell pepper, carrots, garlic, tomatoes, tomato sauce, beef broth, water, wine, and spices.
  3. Cover and cook on low 6 hours. 
  4. Add frozen tortellini. Cover and cook 45 minutes. 

Yields 8 servings
